Funghi Ripieni, whole field mushrooms, filled with a mix of mushrooms, breadcrumbs, green Sicilian olives, capers and pancetta, served with fresh pear, green Sicilian olives, capers and pancetta, served with fresh pear and a red fig and gorgonzola sauce on top of a parmesan basket.

Cappelli di Prete, Biagio’s handmade pasta, filled with prosciutto and burrata cheese, served on an artichoke  puree, with cream of black truffle and fresh asparagus.

Barramundi Trinità, fresh, wild Australian barramundi served 3 different ways, with a reduction of lobster bisque

Fettuccine of Barramundi, ribbons of fettuccine, made entirely of barramundi, served with fresh sandcrab meat

Barramundi ai carciofi, Australian barramundi, filled with an artichoke puree, and asiago cheese

Barramundi pistacchio, served with a Pistachio crust

Fragole marinata, fresh strawberries, marinated in Italian strawberry liquer, served with cream and ice cream

On the occasion of the dinner of the Accademia Italiana della Cucina on 21st October, the Delegation visited the Italian restaurant ‘Biagio’. The dinner was attended by the academician and  their families. The chef, the Sicilian from Bronte, Biagio Biuso, created a great original menu based on unique specialties, two of which are his creation and invention, such as the Cappelli di Prete stuffed with burrata and ham, with asparagus and truffle sauce; and Fettuccine al Barramundi, entirely made with local fish, used instead of the flour as a base for the puff pastry with fish sauce. Also the barramundi with artichoke puree and Asiago cheese and the barramundi filled with Pistachio of Bronte were delicious dishes. The menu brought out the extraordinary qualities of the chef to combine typical local products with the Italian ones, like the combination with the authentic pistachios of Bronte. The result is a modern and dynamic Italian cuisine. The Delegation expressed its own appreciation also for the choice and the matching with premium wines.

 In occasione della Cena dell’Accademia della Cucina del 21 ottobre scorso la delegazione ha fatto visita al ristorante italiano Biagio. Erano presenti gli Accademici e i familiari. Lo chef, il siciliano di Bronte, Biagio Biuso, ha creato un menu’ di grandissima originalita’ basato su specialita’ uniche’, due delle quali di sua creazione ed invenzione, quali i Capelli di Prete ripieni di burrata e prosciutto, con salsa di asparagi e tartufo, e le fettucine di barramundi, cioe’ fettuccine fatte interamente di pesce locale, utilizzato al posto della farina come base per la pasta sfoglia con sugo di pesce. Delizioso anche il barramundi con pure’ di carciofi e formaggio asiago e il filetto di barramundi con pistacchio di Bronte. Il menu’ ha messo in luce le straordinarie qualita’ dello chef di combinare prodotti tipici locali con quelli italiani, quali gli abbinamenti con gli autentici pistacchi di Bronte. Il risultato e’ una cucina italiana moderna e dinamica. La delegazione ha manifestato il proprio apprezzamento anche per la scelta e la combinazione con i vini di alto livello.
